Şemborek Dish History, Famous Place, Recipe and Preparation

History

The exact history of the Şemborek dish is unknown, but it is thought to have a long history dating back to Central Asia. This dish, which has an important place in Turkish cuisine, was brought to Anatolia by the Turks who migrated and began to be known by different names in different regions.

Famous Place

Şemborek is made in many parts of Turkey. However, the most famous places are:

  • Mardin: Şemborek, one of the most important flavors of Mardin cuisine, is also known as “sömbüsek” here. This delicious dish, which is especially consumed during the month of Ramadan, is also among the street delicacies of Mardin.
  • Urfa: Şemborek, which also has an important place in Urfa cuisine, is also called “içli köfte” here.
  • Antep: Şemborek, which also has a different version in Antep cuisine, is known as “içli köfte” or “içli katmer”.

Recipe

There are many different recipes for Şemborek. However, in general, leavened flour, water, salt and yeast are used for its dough. For the stuffing, minced meat, onion, pepper, spices and parsley are preferred.

Preparation

  1. Flour, water, salt and yeast are mixed and kneaded for the dough.
  2. The kneaded dough is left to ferment.
  3. Minced meat, onion, pepper, spices and parsley are sautéed for the stuffing.
  4. The leavened dough is divided into balls and rolled out thinly.
  5. The stuffing is placed on the rolled dough and closed.
  6. Prepared şemboreks are cooked in the oven or in a pan.

Tips

  • It is important to knead the dough well and let it ferment.
  • The stuffing should not be too watery.
  • Egg yolk can be brushed on the şemboreks before baking.
  • If it will be cooked in the oven, it is cooked in a preheated oven.
  • If it will be cooked in a pan, it is cooked in a little oil.

Şemborek is served hot with yogurt or ayran.
